One Pan Molasses Chicken & Potatoes



I created this delicious dish over a year ago and posted the recipe on Instagram. It was such a hit that I finally decided to put it on the blog! This recipe is very popular and has received rave reviews! A few of my personal friends have continued to regularly make this dish for themselves or their families. My teenager loves it and he is the pickiest eater on the planet!

I love this recipe because all of the ingredients cook on one pan. The best thing about sheet-pan dinners is that once the dish goes in the oven, all you have to do is set a timer and let it cook. It gives you an opportunity to complete other tasks while dinner is in the oven. You can prepare a salad to accompany it you can clean the kitchen! Either way, this time is for you! So, without further ado, here is my One Pan Molasses Chicken & Potatoes.

 

TIME: 45 Minutes

YIELDS: 4-5 Servings

INGREDIENTS

2 pounds of chicken thighs, medium diced 1 pound of small red red potatoes, medium dice 1 yellow onion, medium diced 6 garlic cloves, chopped 1 tablespoon of Himalayan Salt 1/2 teaspoon of black pepper 3/4 cup of molasses 3/4 cup of mustard 2 tablespoons of extra virgin olive oil

METHOD 1. Preheat the oven to 425 degrees.

2. Prepare and chop everything as listed above. You can chop the chicken, potatoes, and onions into smaller pieces if you prefer that over medium dice. It may cook faster that way. The goal is to chop everything in uniform size so all of the ingredients cook evenly.

3. Combine the diced chicken, potatoes, onions, and garlic in a large bowl with the remaining ingredients. Give it a quick mix to be sure everything is well-combined. Place all ingredients onto a sheet pan with parchment paper. Roast for 40 minutes or until the potatoes are tender. Serve immediately.

Substitutions and suggestions: Keto - sub parsnips for potatoes

If you don't like red potatoes you can use sweet potatoes!

Garnish with green onions
