Vegan Cauliflower Taco Bowls
Hey Sassy Fam! You're going to fall in love with my vegan cauliflower taco bowls! And you don't even have to be vegan to love them!
It's weird, as of late I have been on a plant-based diet kick so don't be surprised if I end up flooding your inbox with meatless recipes. But don't be alarmed, I will continue to share my clean-eating meat dishes as well!
There's a lot of components in this recipe so I broke it down into parts for you! Pay attention to the multi-tasking tidbits because there are a few of them!

Step 1 - ONE PAN ROASTED SALSA
For this recipe, feel free to use any salsa you want! If you need a recipe, here is the link to my delicious roasted salsa. Feel free to make it ahead of time so you can break up your prep work:
https://www.yoursassychef.com/single-post/2019/06/01/One-Pan-Roasted-Salsa Step 2 - BROWN RICE Ingredients 1 cup brown rice 2 cups of water 1 tablespoon olive oil A pinch of Pink Himalayan Salt Method 1. If you have a rice cooker, place all of the ingredients in the rice cooker, press the button, and cook! 2. If you don't have a rice cooker, place all of the ingredients in a medium sauce pan with a tight fitting lid. Cook on medium-low for 30 minutes. Fluff with fork. Immediately after you place the rice on the stove/rice cooker, move onto the cauliflower!
Step 3 - CAULIFLOWER
Ingredients 1 head of cauliflower, chopped in florets 2 tbsp oil 2 tsp salt 1 teaspoon smoked paprika 1 teaspoon chili powder 1/2 teaspoon black pepper Method 1. Preheat oven to 400 degrees. 2. Chop cauliflower into florets. 3. Throw all of the ingredients into a bowl and mix until well-combined. 4. Place cauliflower on a baking sheet that is sprayed with cooking spray. 5. Roast in the oven for 30 minutes. Immediately after you place the cauliflower in the oven, move onto the charro beans.
Step 4 - CHARRO BEANS
Ingredients
1 (15 ounce) can of pinto beans (with liquid, not drained)
1/2 cup yellow onion, chopped
1 garlic clove, minced
3 tablespoons white vinegar
1 teaspoon Pink Himalayan Salt
1/2 teaspoon black pepper
Method 1. Prepare the onion and garlic as listed above. 2. Place all of the ingredients into a small pot over medium-high heat. 3. Simmer on the stove for 10 minutes or until it comes to a medium boil. Onions must be translucent and soft! 4. Feel free to add chopped jalapeno for added heat!
Step 5 - ASSEMBLY 1. Place a serving (1/2 cup) of rice on the plate. 2. Place a serving (1/2 cup) of beans on top of the rice. 3. Place a cup of cauliflower on top of the beans. 4. Drizzle with salsa. Optional Garnishes Chopped cilantro Chopped jalapeno Avocado slices
