My favorite summertime foods consist of fresh crunchy vegetables, dark leafy greens, and protein sources that not only keep me lean, but cool me off at the same time!

If you've made my other recipes, you understand my love affair with mayonnaise. I use the term, "affair" because I know that the canola oil (GMO filled) that's used in most mayonnaise brands is bad for us. Technically it should be forbidden, however I can't help but gravitate towards its cool, creamy texture.
Luckily I found a great product that has the exact same flavor as other mayonnaise brands, without the use of canola oil! This mayonnaise I speak of is Chosen Foods Mayo. Chosen Foods Mayo is made with avocado oil. Avocado oil is commonly known for lowering cholesterol and fighting heart disease! Something that we should all want in our diet! YIELDS: 2-4 Servings
TIME: 15 Minutes
Ingredients
1/2 pound cooked shrimp (medium-large in size)
8-10 ounces of thawed (if frozen) cooked crab meat, shredded
1/2 cup red onion, diced
4 green onions, diced
1 cup baby carrots, chopped
1 garlic clove, minced
1 tablespoon, cilantro chopped
3 tablespoons Chosen Foods Mayo
2 tablespoons Mirin Cooking Wine - mirin cooking wine has small traces of sugar in it. If would like to avoid this ingredient, substitute an additional tablespoon of white vinegar with 2 teaspoons of real maple syrup or Truvia!
2 tablespoons Bragg's Liquid Aminos
2 tablespoons white vinegar
Zest and juice of one lime
1 tablespoon Pink Himalayan Salt
1/2 teaspoon black pepper
Method
1. Throw everything into a large bowl and mix until well combined! Add salt and pepper to taste!
2. Serve over 1-2 cups of greens. Garnish with avocado slices and chili powder!
