Ok, team! Most veggie ball/burger recipes I come across I really don't care for. They have A TON of ingredients, which is totally overwhelming, AND they just don't taste good!
What do I do if I can't find a decent recipe for something I want? I create one (that's not the only reason I create recipes, but you know what I'm saying)! Not only is this recipe decent, it's delicious! I've also prepared a zesty, sassy, savory sauce that pairs perfectly with this meatless dish! You're going to love it!
PB Bean Balls. Ingredients 2 (15 ounce) cans of chick peas 1 tablespoon flax 3 tbsp water 1 tsp salt, Italian seasoning, 1 tsp fennel 1 tsp salt 1/2 tsp pepper 1 cup almonds 1 tsp dried parsley Almond flour 1. Preheat oven to 350 degrees. 2. Combine all of the ingredients except almond flour in a food processor. Process until the beans are smooth and the almonds are in pieces.
3. Scoop out golf ball size balls, roll them in almond flour, and place them onto a non-stick sheet pan (or add oil/parchment paper/silpat to the sheetpan).
4. Bake for 30 minutes. Turning the pan once halfway thru the cooking process. 5. Pull meatballs out of the oven and allow them to cool for 10 minutes prior to serving time. If you don't allow them to cool down before consuming, they'll fall apart and burn your mouth! Don't do that!
The balls may appear dry when done, but trust me when I say that they're definitely NOT dry! They just appear that way because of the almond flour! While the balls are baking, prepare the Warm Pepper Relish! Ingredients 1 of each: red, yellow, and orange pepper, small dice 3 garlic cloves, minced 1 cup onion, small dice 2 tsp Himalayan salt 1/2 teaspoon black pepper 1/2 teaspoon smoked paprika 1 (15 ounce) can of tomatoes 2 cups water 3 tablespoons white vinegar Zest of one lemon 2 tablespoons of coconut or avocado oil Method 1. Prepare the peppers, onion, and garlic as listed above. 2. Place a large skillet over medium high heat. Place the oil in the pan and allow it to cover the entire surface of the pan. Once the oil gets hot (about 20 seconds), and the peppers, garlic, and onion. Stir constantly so the garlic doesn't burn. Add a dash of salt and pepper.
3. Once the veggies become caramelized, add the tomato sauce and water. Bring to a strong simmer (practically bubbling), and then turn the heat down to medium-low.
4. Add the remaining salt, pepper, paprika, and vinegar. Simmer for another 10 minutes. Add the lemon zest and salt and pepper to taste. 5. Dip the veggie balls in the relish!
