SWEET ONION CITRUS CABBAGE
How do you prefer your Thanksgiving meal? Simple? Traditional? For the most part, I like my mine traditional with a pinch of flair! Let's be honest, something different & unique keeps the guests intrigued!
If you're like me, and you love alluring and enticing dishes, you MUST make my sweet onion citrus cabbage! It's delightfully tasty, easy and inexpensive to make, and will truly add color and excitement to your table! The best part about this dish? It's versatile enough to have it year-round! Ingredients
4 tablespoons of either coconut oil, grass-fed butter and ghee. 1 head of purple cabbage, chopped in julienne slices (long skinny strips) 2 shallots, sliced 1 medium sweet onion, sliced 5 garlic cloves, minced 4 tablespoons red wine vinegar Zest and juice of one whole lemon Zest and juice of one whole lime 1 tablespoon of real maple syrup 1 1/2 tablespoons of Pink Himalayan Salt 1 teaspoon black pepper 3-4 green onions, sliced 2 tablespoons of pumpkin seeds 2 tablespoons of sunflower seeds Method 1. Chop all of the ingredients as listed above.
2. Place the largest saute pan you have over medium-heat. Add the oil/butter and allow it to melt and spread over the bottom of the pan. 3. Add the cabbage, onions, shallots, and garlic. Stir and saute for about 7 minutes or until the cabbage starts to become tender. It is important to continuously, yet gently stir the cabbage because we don't want the onions or garlic to burn. Stirring continuously also keeps the ingredients from sticking to the pan.
4. As the cabbage gradually becomes tender, add vinegar, maple syrup, lemon & lime zest and juice, Himalayan salt, and pepper. Stir. 5. Cook on medium for another 10 minutes or until cabbage is super soft, almost creamy like. Feel free to add additional salt & pepper to taste. 6. Place cabbage in a serving bowl. Garnish with green onions, pumpkin seeds, and sunflower seeds. Optional Add-Ins: 1. Diced chili peppers 2. Diced cooked bacon pieces 3. Pico de gallo
