How much do you love coconut? One of the reasons why I love coconut so much is because it is a superfood! By definition, a superfood is a nutrient-rich food that is beneficial for our health and well-being, and y’all know that I’m all about that clean-living lifestyle! But when I found out that it can be used as a moisturizer, hair gel, lotion, mouth rinse, a butter replacement, and can be cooked/baked in both sweet and savory foods I became completely hooked! A talented product as this can truly be the most practical thing to have in your household! PLUS it taste great! And no, it’s not too coconut-ty (which I actually get asked a lot).
In my community, I’m pretty much known as the coconut queen. It’s obvious that I use coconut oil for almost every occasion. However coconut milk is another one of my faves! It's consistently used in my shakes, as a coffee creamer, in my curries/sauces, and when I have those like late night cravings of cereal and granola (grain-free of course, lol). But this recipe I’m about to share with you is something a little different! It is the perfect marinade/salad dressing for when you are in the mood for flavors that taste fresh, clean, and fun! I’m stoked about this recipe! Y’all are going to love it!
Ingredients
4 tablespoons of olive oil 1 tablespoon of sugar-free rice vinegar
3 tablespoons of coconut milk
Zest of one lime
1 teaspoon of liquid aminos (Bragg’s or Coconut Aminos)
2 pinches of Himalayan salt and pepper
1 teaspoon of truvia or real maple syrup
1 tablespoon of fresh basil (optional)
Method
Combine all of the ingredients into a blender and blend until well combined! Use it as a dressing or marinade!
