Better Than Everything Keto Cashew Bars

Y'all! This is the best bar recipe I've ever created. They are served better cold so be sure to store them in the fridge! It's the perfect treat for you and your loved ones! Share them with everyone you know!!

Ingredients

1 cup of cashew butter (can substitute almond butter if needed)

2/3 cup truvia or stevia

2 large eggs (or 3 medium)

3 tablespoons almond flour

1 teaspoon baking soda

A pinch of Himalayan pink salt

2 teaspoons cinnamon

¾ cup of Lilly’s sugar free chocolate chips (You can get these from Whole Foods or any other health food store)

Method

  1. Preheat oven to 350 degrees. Line a small square baking pan with parchment paper. If you don’t have parchment paper, line the pan with foil and then spray the foil with cooking spray.

  2. In a large bowl, mix together all of the ingredients except for the chocolate chips. Mix/whisk ingredients until well combined, and then fold in the chocolate chips.

  3. Pour the batter into the baking pan. Spread the top of the batter evenly with a spatula.

  4. Bake in the oven for 20-22 minutes. Use the toothpick trick to test the consistency. Ideally we want the bars to be gooey, but not runny!

  5. Pull the bars out of the oven and cool to room temperature.

  6. Place bars in the refrigerator and wait at least 30 minutes ahead of serving time. Cut the bars evenly into small - medium squares. These bars are soft and decadent – you don’t need a big portion to be satisfied! Trust me!

  7. Bars must be refrigerated!

  8. Enjoy!
