The Only Cauliflower Crust Pizza You'll Ever Need

Ok! Now this recipe is separated into parts - crust, sauce, toppings. Please read through entire recipe before attempting it! Be sure to gather all of your ingredients before you start the process. It may seem like a lot but I assure you it's quite easy! AND totally worth the calories! Enjoy!

Crust

Ingredients

Medium sized head of cauliflower or a bag of riced cauliflower. Either way you should have about 2-3 cups of riced cauliflower.

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

2 garlic cloves, minced (or a ½ teaspoon garlic powder works, but you know me – fresh is best)

¼ teaspoon crushed red pepper

½ cup shaved parmesan cheese

1 egg

½ teaspoon Himalayan salt

¼ teaspoon black pepper

Method

1.Preheat the oven to 450 degrees.

2.If you have a whole head of cauliflower, chop into pieces and then place it in the food processor, along with the 2 cloves of garlic to chop. If you have already riced cauliflower you can skip this step, but be sure to mince the garlic separately!

3.Place riced cauliflower in the microwave for 4.5 minutes in order to cook. Pull cauliflower out of the microwave and place cauliflower onto a tea towel, kitchen cloth, or cheese cloth. Take the ends of the towel, roll them together, and then squeeze the moisture out of the cauliflower over the sink.

4.Pour the cauliflower into a bowl and mix it with the basil, oregano, garlic cloves, crushed red pepper, parmesan cheese, salt, and pepper. Mix together until well combined. Form a ball until it resembles a ball of dough.

5.Take a piece of parchment paper or foil (if you use foil be sure to spray cooking spray on it) and place it on a sheet pan. Place the cauliflower ball onto the pan and roll it out with a rolling pin. If you don’t have a rolling pin press the dough down with your palm and pat and spread it out until it forms a 10” round crust.

6.Bake the pizza crust in the oven for 10 minutes. The more caramelized the crust is, the more flavorful it becomes!

While the crust is cooking let’s put the sauce together real quick!

Sauce

Ingredients

1 - 12 oz can organic tomato sauce ( be sure to check the ingredients to make sure the sugar content is low. 1 can tomato paste 1/2 teaspoon garlic powder 1/2 teaspoon dried basil 1/2 teaspoon dried oregano If you have dried Italian seasoning that works too! 1/4 teaspoon fennel 1/4 teaspoon crushed red pepper (optional) 1/2 teaspoon Himalayan salt 1/8 teaspoon black pepper

Method

Put all of the ingredients in a bowl. Whisk together until the paste breaks down into the sauce. Set aside.

Toppings

Ingredients

4 organic, nitrate-free sausages - sliced thin on a biased

1 tablespoon olive oil or cooking spray

1 small white onion, sliced thin 1 jalapeno, sliced thin in rounds

1-2 cups of shredded mozzarella cheese

2 cups fresh arugula 1 lemon for lemon zest

2 tbsp pine nuts

Method

1.Slice the onion, jalapeno, and sausages. Set aside.

2.Place a sauté pan over medium-high heat. Wait 30 seconds and then spray the pan with the cooking spray or add the olive oil.

3.Place the sausages in the pan and cook until caramelized (about 5-6 minutes). We precook the sausage before placing it on the pizza to make sure that the sausage is thoroughly cooked when we pull the pizza out of the oven.

By now the cauliflower crust pizza should be done cooking and we can make the pizza!

Pizza Assembly:

1. Pour a cup of sauce onto the crust (still keeping the pizza on the original pan) and spread it evenly in a circular motion leaving an inch of space at the edge of the crust.

2. Sprinkle the cheese onto the sauce.

3. Distribute the onion, sausage, and jalapenos evenly onto the cheese.

4. Bake in the oven for another 7-9 minutes.

5. Pull the pizza out of the oven. Slice it in eighths, and then top it off with fresh arugula, fresh grated lemon zest, and pine nuts.
