INGREDIENTS FOR SALAD
2 zucchini, sliced in a zoodler/spiralizer 1 head cauliflower, chopped small - feel free to use broccoli or asparagus as a substitution 2 different colored bell peppers, sliced in thin strips
1 bag of spinach leaves or arugula 1 red onion, sliced 1/2 cup sunflower seeds 1/2 cup (additional mix nuts) 1/4 cup chopped cilantro
INGREDIENTS FOR DRESSING 1 cup evoo - extra virgin olive oil 1/4 cup vinegar - cider, rice, or white 1 teaspoon turmeric powder 1/2 teaspoon chili powder 1 teaspoon curry powder Juice and zest of one lime 1 teaspoon agave, real maple syrup, pure cane syrup 1/2 teaspoon Himalayan Salt Pinch of Pepper
METHOD
1. Prepare veggies as listed above. Toss everything together in a large bowl, set aside.
2. Combine the dressing ingredients everything in a blender and blend until smooth, or combine everything in a large/tall/deep measuring cup and use an immersion blender to blend.
3. Toss 1/4 cup of dressing into salad and mix. Add an additional tablespoon of dressing at a time until it reaches your desired flavor and consistency. Only pour the dressing on when you are ready to eat the salad otherwise the zoodles will become soggy. Enjoy!
