Everything's Nice with Keto Pumpkin Spice Bites


Ok! So these Keto bites have 10 grams of Carbs. If you are strict Keto, I would probably stick to just eating one of these per day. Best of luck with that because these pumpkin treats are to die for! And btw, you don't need to be keto to enjoy this little piece of clean-eating heaven!

Prep Time: 35 Minutes Yields: 16 Servings The mini-muffin tin will make more servings so let's consider 2 muffin bites 1 serving.

CAL 187 | CARBS 10 | FATS 15 | PROTEIN 4 | SUGAR 4

Ingredients

½ cup Coconut Oil

3 Eggs

1 ½ cup Pumpkin

1 cup Stevia

½ cup Truvia Brown Sugar Blend

1 ½ teaspoon Sassy baking spice – equal parts cinnamon, ginger, nutmeg

A pinch of ground cloves. Just a pinch. This stuff is strong!

1 ½ teaspoon Baking Soda

1 ¾ cup Almond Flour

1cup Walnuts

Method

  1. Preheat oven to 400 degrees

  2. Spray mini muffin tins with cooking spray. If you would like to use a regular cake pan use an 8 X 8 to get best density and consistency (I actually preferred this recipe in the cake pan instead of the mini-muffin pan.

  3. Combine all of the ingredients, except for walnuts, in a food processor and blend until smooth.

  4. Fold in the walnuts

  5. Portion into mini-muffin tin. Bake for 25 minutes or as I always say, do the toothpick trick!! Place a toothpick in the cake and if it pulls out clear of any cake crumbs, it’s done!

  6. If you are using a cake pan instead, bake for 30 min. Use toothpick trick as needed!

  7. Store in refrigerator! These are best served cold and dense!

Optional Add-Ins:

Unsweetened chocolate chips

Shredded coconut
